Acclaimed for his award winning “Lux Mex” cuisine at Trece Mexican Kitchen and Tequila Lounge combined with his 23 years at The Mansion on Turtle Creek, Chef Amador Mora is exploring new ventures in Maximo, an upscale Mexican restaurant. During his tenure at Trece, Chef Mora received Four Stars from the Dallas Morning News for his imaginative Lux Mex cuisine, earning the reputation for Trece as one of the finest Mexican restaurants in the country. Chef Mora will show us his innate talent for preparing fine Mexican cuisine with Maximo’s eclectic menu, spotlighting both traditional Mexican plates as well as unique dishes from the four regions of Mexico: Puebla, Yucatan, Veracruz and Oaxaca.

Chef Amador Mora grew up as one of twelve children in the mountainous town of Dolores Hidalgo Gto, Mexico. From watching and learning at the side of his mother Gabriela, he took authentic recipes of Mexican lore and created a contemporary and innovative menu at Trece as their creating chef. Chef Mora’s homegrown attitude toward cooking and aspirations for fine Mexican dining puts Maximo in an entirely new class of restaurants for true Mexican cuisine.

Mora moved to Dallas in 1977, unable to speak a word of English. His culinary career began as a dishwasher in the kitchen of S & D Oyster Company. Mora worked his way up through the ranks in several other established restaurants including Jean Claude, Le Boul Miche, Ratcliffes and Newports before joining Rosewood Hotels & Resorts’ The Mansion on Turtle Creek in 1980.

At the Mansion on Turtle Creek, Mora was quickly promoted to positions allowing him a higher responsibility in kitchen. By 1988, he earned the position of Grill Chef under the direction of the hotel’s distinguished Executive Chef, Dean Fearing. Soon after, he was named Saucier, Sous Chef and Senior Sous Chef before earning the title of Chef de Cuisine in 1995. Dignitaries and celebrities including former Presidents Bill Clinton and George H.W. Bush, current President George W. Bush, Queen Elizabeth II, Presidente Vicente Fox, Frank Sinatra, Linda Ronstadt and many others have experienced his innate talent for preparing fine cuisine. In addition, Mora has been featured in La Fuente, The Dallas Morning News, PaperCity, Modern Luxury Dallas and the La Vida television program, among others.

Amador Mora credits Alberta, his wife of 21 years, and daughters Lily and Gaby as his inspiration. In his spare time, he enjoys running and cooking for his family.
